Healthy Chocolate Chips Cookies

 I know there are many types of cookies, but since I was little, chocolate chip cookies have always been my favorite! 🤗 I loved to eat them (although at that time I ate from those brand ones full of sugar and chemicals). It was almost a tradition to open a package along with a glass of milk on weekend mornings.

Thanks to the fact that I am now more aware of the harms of processed foods, I have changed them for this healthier but just as delicious version, where I can afford to eat a few every day until they are gone 🤭.

​

All ingredients are healthy, so say Goodbye to regret and Hello to your favorite guilt-free cookies!

 Healthy Chocolate Chip Cookies 

​

​

 Preparation Time: 15 minutes                 Cooking Time: 15 minutes                 Total Time: 30 minutes 

​

 Portions: 30-40 (depending on size) 

​

Ingredients:
​

🤎 260 g Granulated Monkfruit or Stevia

💛 150g Almond flour

🤎 50g Oats Flour (for the low carb/keto version use more

almonds flour instead of oats)

💛 165g Peanut butter (or almond butter)

🤎 200g Unsweetened chocolate chips (I used Lily's brand

which are sweetened with Stevia

💛 2 Eggs

🤎 1 tbsp Vanilla extract

💛 1 tsp Baking powder

🤎 1 tsp Baking soda

Cookware:

​

🔅 Large bowl to mix the ingredients

🔅 Blender or food processor

🔅 Non-stick oven mat (see photo to the right).

    If  you don't have one, you can use aluminum foil

    or parchment paper

🔅 Oven

Instructions:

​

🔅 In a bowl mix the flour (1 cup at a time) with the sweetener, baking powder,

    baking soda & chocolate chips.

🔅 In a blender mix the eggs, peanut butter & vanilla extract .

🔅 Mix all together and leave in the freezer for about 1.5 hours.

🔅 Pre-heat the oven to 190°C.

🔅 On a tray with parchment or aluminum paper spray some coconut oil .

🔅 With a spoon, form small cookies and place them separated on the tin.

🔅 Leave in the oven for about 15-20 min.

Tip: don’t leave them longer even if they seem not to be ready or they’ll get hard 😣.
